The grapes are all hand harvested.  Direct Press.  The free run juice and the light pressed juice are stored together.  Cold settled juices are racked off next day.  The temperature are monitored and controlled between 12 to 14 ℃ during the fermentation.  No Malolactic fermentation proceeded.
