Vinification : Harvested half in 2019, half in 2020. 2019 grapes underwent carbonic fermentation, 2020 grapes mash fermentation, then blended in December 2020. The carbonic fermentation gives the wine a nice structure and herbal aromatics, mash fermentation gives more mouthfeel and fruity character.
