Vinification : Harvested throughout the vintage with early parcels of Semillon going into oak and mid to late season coferments of all varietals being stored in Inox. Grapes crushed and destemmed into open fermenters. Natural fermentation on skins until dry and pressed at around 2 – 3 weeks. Spontaneous malo/lactic fermentation often completes on skins as well. SO2 added post ferment prior to bottling.
