Vinification : Steira is an Ovada DOCG Vigna, obtained only from Dolcetto grapes from the Rocco vineyard - planted in 1970. Spontaneous fermentation takes place in old barrels, with wild yeasts only, and prolonged maceration. It then matures for 20 months, or more, in second-hand barrels.
