Vinification: Grapes were harvested by hand in September and 100% destemmed. The various varieties were co-fermented. The wine saw daily manual punch downs and skin maceration for two weeks. Malolactic fermentation occurred naturally. After three rackings, the wine was bottled unfined, unfiltered and with minimal added sulfur.
