Vinification : All of the grapes are hand harvested, and seperatly go through spontenous fermentation in a stainless steel tanks. Once the inital fermentation is complete, the wine is blended with the Merlot to help activate the second ferementation in bottle.
No fining or filtering and no additional sulpher added at bottling.
