Vinification : The grapes are foot stomped, allowed two days on skin and stems, pressed to barrel and aged sur lie. The natural sparkling is made using the ancient Italian technique of “Col fondo”.First, the Abouriou wine made above is barrel aged for 12 months. Then an orchard blend of fresh apple juice from the following season is added to sweeten it which will then ferment to make a sparkling wine. The sparkling occurs naturally in the bottle. Every bottle is its own secondary fermentation tank and it takes up to six months to finish.
