Vinification : Indigenous yeasts. Not chaptalized. Semi-carbonic maceration for 12 days. The press is done slowly without damaging the harvest and then allows aging on very fine lees and of very good quality. Aged in oak barrels on lees (6 months). The barrels are old because the goal is to oxygenate the wines but not to wood them. The end of the alcoholic fermentation as well as the malolactic fermentation take place in oak barrels. Light sulphiting after the malolactic fermentation.
