Vinification : The Cabernet Franc juices flow by gravity into underground concrete vats to ferment naturally and regulate themselves by geothermal energy. 80% of the volume is filtered before the end of alcoholic fermentation and bottling. The 20% leftovers that are still fermenting are then reintegrated into the filtered wine so that the fermentation continues in the bottle naturally. The bottles are then handled (riddling phase) then disgorged at the estate without expedition liqueur. The grapes are harvested early to preserve their freshness and their aromas of red fruits.
