Son of Paul Giboulot, a pioneer in biodynamic viticulture in Burgundy, Emmanuel Giboulot has always advocated staunchly for an Earth-first approach to farming. Having been born into this eco-first attitude, Emmanuel came to know the biodynamic approach not as radical or cutting-edge, but just as "good sense." In fact, he is so dedicated to chemical-free farming that he was fined by the French government for refusing to spray his vines! He now farms 12 hectares of vineyards in the Côte de Beaune.

Vinification : Partially de-stemmed. The alcoholic fermentation takes place in open wooden vats. The extraction of aromas, tannins and colour is natural (no added yeast, enzymes or heating) and is done by traditional pumping over and punching down. Maceration for approx. 3 weeks. Free-run wine and first press are blended.
Vineyard: Clay soil on cracked limestone. The exposure is South-East. Comes from two plots about 500 meters apart, located in Magny- Les-Villers, and Villers-La-Faye. The name of the cuvée finds its origin in the hill which dominates this last parcel and which is surmounted by a priory. About twenty years old for the youngest, and fifty years old for the oldest ones, these vines are planted in Lyre and high trellising. 20-50 year-old vines. Planted in Lyre and high trellising.
