Vineyard: The 58 acre vineyard is an organically farmed property in the heart of the Santa Ynez Valley. Positas fine sandy loam soils.
Vinification: Destemmed, Pumped over once a day until the wine went dry. Primary fermentation takes place over 14 days on the skins. No sulfur added during fermentation. Each varietal was fermented separately and pressed and aged in neutral French oak. All wines went through full malolactic fermentation. Gentle pump-overs 2-3 times per day for 3 weeks. The wine was racked twice prior to bottling. Bottled unfined and filtered.
