Grapes : 70% Cabernet Sauvignon, 20% Merlot, 10% Cabernet Franc

Vinification : Grapes are hand harvested. Whole cluster fermentation occurs spontaneously with native yeast, where it sits for a 15-day maceration. Finishes fermentation in large neutral barrel. Bottled unfined with a light filtration. Fermentation at Closerie des Moussis gets kicked off with a pied de cuve—a technique that Chiome perfected during her days as the oenologist for the local wine school, Lycée Agro-Viticole de Bordeaux-Blanquefort. That is, a small portion of grapes are harvested several days before true picking begins to create a starter batch of active native yeasts.
