Vinification : The Pinot Blanc is well known in Alsace, but is still a hidden gem in Champagne region. The grapes, from 25 years old vines, are hand-harvested. After a malolactic fermentation, the vinification takes place in stainless steel (60%) and in oak barrels (40%). No dosage.
