Vinification: Hand harvested, and macerated on the skins for 10- 12 days, the directly pressed. Each varitey goes through slight malolactic fermentation in large foudre for 10 months separately. They are then blended into stainless steel and left to sit for 1 week, then bottled. No finning or filtering; light addition of SO2.
