Vinification: A rare gem in Georgian viticulture, the 2020 Vardisperi Rkatsiteli is crafted from the unique Pink Rkatsiteli grape, discovered in 1948 through a one-in-a-million spontaneous bud mutation. This distinct variety, now independent, brings an exceptional character to our wine. Handpicked from our organic vineyard, the grapes underwent spontaneous fermentation in Qvevri for five months, followed by two years in again in our cellar. The result is a light golden wine with subtle pink hues, embodying medium body and dryness. On the nose, it presents an enchanting bouquet of roses, golden raisins, and spice, leading to a palate rich with citrus preserves, plums, and raspberry. The finish is a harmonious blend of bitter herbs, pink grapefruit, and tannins, at 13% ABV. Best served cool, this wine is a testament to freshness, cleanliness, and remarkable structure.
