Soil: Sauló- an acidic white granite-based sandy soil with low limestone content, low organic matter and good natural water drainage
Vinification: After a light pressing to extract only the first press must, the characteristics of the variety are extracted through different types of spontaneous fermentations in amphoras made of sauló (sandy, granitic soil) and in concrete egg made of clay. On the one hand, the aim is to increase the “terroir” character, the aromatic richness and the voluminous sensation in the palate, as well as enhancing the structure and preventing reduction. Moreover, the shape of the egg enables the free movement of the lees, thus providing a “natural bâtonnage”.
