Vinification: Harvested preserving a high natural malic acidity in the grapes, that allows long ageing. Very smooth pressing as whole clusters and the first fermentation takess place in second-hand French oak barrels. After ageing for a short time, the Champenoise method is applied. Then the wine ages for a minimum of 10 years, on the lees.
