Vinification : Let it stay on the lees in the tanks for 2 years. Half of it was on the full lees for 20 months and the other half was racked after around 9-10 months and stayed on the fine lees for the remaining time. It was bottled with just 20 milligrams of added sulfites resulting in a total amount of SO2 of 32mg/l.
