Vinification : Let the wines stay on the full lees for as long as possible. Since they are a small winery and do not yet have the infrastructure to store a vintage over more than one year in the barrels and tanks they bottle them just right before harvest to have the vessels empty for the next vintage but at the same time maximizing the time that they can give their wines.
