Vineyard : The eight acres of grapevines found at Sunhawk Farms were planted twenty years ago by John Schaeffer, a pioneer of natural products and solar energy, who bought the 300-acre property and built an ideal retreat up the mountain next to Duncan Springs Peak.
Vinification : The fruit was destemmed and macerated for three days then pressed to a tank. The juice was then barreled down for fermentation. 
This wine received seven months of elevage on lees with no battonage and topped every 14 days in neutral 225L barrels. The two lots were racked together for bottling. As always - unfined, unfiltered, and no SO2.
