MISSION Cunca de Ouro 2019 Ribeira Sacra, Spain (red wine)

Vinification: Clusters, which were hand harvested on September 30th, were footstomped with 100% stems in a stainless fermenter. No SO2 was used at crush and fermentation kicked off rapidly. Maceration lasted 12 days, with progressively gentler pigeage. After pressing, the wine was allowed to settle before being transferred into two used 225L barrels, in which it rested on its lees for ten months without disturbance. Two barrels were racked to stainless in order to marry before bottling.
