Vinification: The varieties were hand picked early ripe in the beginning of September and co-ferment for 4 days on skin and stems, then whole bunch pressed. Fermentation occurs spontaneously with native yeast. Aged 4 months in stainless steel on the lees. Unfined & Unfiltered.
