Vinification : The manually harvested Mtsvane is carefully sorted before being placed in qvevri (buried clay earthenware amphorae). Fermentation occurs spontaneously with native yeast, and in the process of fermentation, the wine is stirred 4-5 times a day. The wine macerates with the skins for 7 months. At the end of fermentation, grape seeds, pressed skins, and grape bunches settle at the bottom of the clay vessel. The wine is aged both in qvevri and in old French oak barrels. Unfined & Unfiltered.
