Vinification: The manually harvested Pinot Noir comes from 30-80-year old vines grown on limestone-slabs. The juice undergoes a long fermentation with native yeast for about 25 days in wooden vats. The wine then ages between 10 and 20 monts in large oak barrels. Unfined & Unfiltered.
Sulfites: low addition at bottling
