Vinification: The Sangiovese is manually harvested in whole cluster and goes directly to press. The wine is allowed to settle for twenty-four hours and then is racked from the gross lees to stainless steel for 6 months. 10% of Sangiovese juice from 2019 is introduced to the tank to start a secondary fermentation in bottle using indigenous yeast. Unfined & Unfiltered. No dosage or sugar added.
