Grapes: 63% Sangiovese, 37% Grenache
Region: San Diego, Southern California
Vinification: The grapes are sourced from Valentina Vineyard in Dulzura, which have never been sprayed with herbicides or insecticides. Harvested September 5-6, 2019. Whole-cluster pressed at harvest, cuvee portion placed in Charmat tank. All spontaneous fermentations. Tank sealed a few days later so wine would naturally carbonate as fermentation finished. Months after fermentations complete, wine chilledand sulfited before bottling in late June of 2020.
Sulfites: No SO2 added.

Tasting Notes from the Producer: Orange blossom, Hawaiian roll, ripe pear, and green apple. Extra Dry. Creamy bubbles.
