Grapes: 32% Petite Sirah, 32% Syrah,25% Nebbiolo, 11% Zinfandel

Vinification: The grapes are sourced from Valentina Vineyard in Dulzura, which have never been spray with herbicides or insecticides. Grapes are destemmed, but not crushed into open top bins with twice daily punch downs. Primary fermentation occurs spontaneously using native yeast, and then the grapes are allowed to undergo malolactic fermentation. The grapes are pressed after 5 days into a stainless steel Charmat tanka nd sealed the wine would naturally carbonate as fermentation finishes. The wine is allowed to settle for 8 months, then bottled unfiltered.
Sulfites: No SO2 added.
