Grapes: 73% Sangiovese, 27% Grenache
Region: San Diego, Southern California
Vinification: The grapes are sourced from Valentina Vineyard in Dulzura, which have never been sprayed with herbicides or insecticides. Grenache harvested August 25, 2020. Gentle, slow, whole-cluster press as for Champagne, taking only the taille portion to stainless tank. Sangiovese harvested August 26, 2020. Foot-stomped andrested for three hours until pressing as with the Grenache. All spontaneous fermentations. Months after fermentations complete, wine racked, chilled, and sulfited in December, 2020. Bottled February 21, 2021.
Sulfites: Small amount at bottling.
Production: 32 cases
Tasting Notes from the Producer: Red plum, violets, tart cherries, and red apple peel. Medium acidity and body.
