Vinification: Hand harvested, and grapes are fermented seperatly, 10-12 days of maceration for each varitey and are aged for total of 12 months in large used foundre barrels. It is later blended in stainelss steel and sits for 2 weeks and then bottled. No finning or filtering; light addition of SO2.
