Vinification: The Pinot Gris is split into two lots which are fermented separately. The first lot is destemmed, gently pressed and fermented in foudre. The second is fermented on skins for 10-12 days. While the wine is naturally fermenting in the foudre, Fiano (37%) and a small amount of Viognier (4%) juice is introduced at different stages as a way of increasing the natural silky mouth feel while maintaining fruit vibrancy.
