TCHOTIASHVILI Khikhvi 2016 Kakheti, Georgia (Orange Wine)

Vinification: The manually harvested Khikhvi is carefully sorted before being placed in qvevri (buried clay earthenware amphorae). Fermentation occurs spontaneously with native yeast, 100% of the skins macerate with the juice for 20 days. After first fermentation, the qvevri is sealed. In spring, the earth temperature increases which starts secondary malolactic fermentation inside the amphora. Late spring, the qvevri is opened and wine is transferred to 300L neutral Caucasian oak barrels and aged for 3 months. Unfined & Unfiltered.
Sulfites: No SO2 added.
