LOS PILARES Assyrtiko 2019 (orange wine)
Region: San Diego, Southern California
Soil: Decomposed granite and alluvial cobble
Vinification: The Assyrtiko grapes were planted by Los Pilares in the Highland Hils Vineyard. Grapes are hand harvested, destemmed, and left to macerate for two days. The grapes are fermented spontaneously with ambient yeast, then pressed to tank after two days.
Sulfites: No added SO2.
