Vinification: The hand harvested grapes were added to the tank in whole clusters, and the free-run juice is drained from the tank and fermented separately. The grapes undergo spontaneous carbonic fermentation from native yeasts. The grapes are then pressed, and that juice is blended back together with the other free-run juice, where they finish fermentation together. The wine is racked once and then aged in neutral french oak for 10 months. Total production: 250 cases.
