Vinification: The grapes were stomped with 100% whole cluster and allowed to soak for 5 days of maceration on both skins and stems. Fermentation occurs spontaneously with native yeast. The wine is aged for 9 months in neutral barrels on the lees. Unfined & Unfiltered.
Sulfites: SO2 below 30ppm.
About the Bloom Project: The Bloom Project is taking on a new form. This is Darek's foray into creating thirst-quenching chillable reds; and just like flowers, the bottlings will be unique one-off micro-cuvées. Be sure to get some while it lasts!
